Make this delicious, healthy after school snack for your kids this St. Patrick's Day, or any day you want to do something a little extra special!
1. Start by gathering fruits for each color of the rainbow: red, orange, yellow, green, and blue/violet. I used strawberries, orange, banana, kiwi, and purple grapes. If your kid doesn't like kiwi, swap in a granny smith apple with the skin on, or green grapes.
2. Cut each fruit into pieces, and make them all close in size to each other to help make your layers look more uniform.
3. Arrange your fruit using the plate as a guide for your rainbow arch! I went about half-way down the plate with my red strawberries and then filled in each color from there, using fewer pieces as needed for each colored stripe of the rainbow.
4. Add some marshmallows to the ends to make it extra special! Enjoy!
